An approach of the sensory quality of Chardonnay wines from Piedmont Plateau and central Transylvania, Romania, is attempted in this paper, through the influence of climatic factors in each individual studied region. Thus, the viticultural bioclimatic index (IBV) for 2013 was established and the sensory characteristics of wines performed by a group of three authorized tasters were scored. The conclusion drawn from our results was that a superior bioclimatic index yields to more flavorful, tasty and slightly astringent wines.
